Ratatouille

INGREDIENTS FOR 4 SERVINGS
• 150g potatoes

• 80g yellow bell peppers

• 100g cherry tomatoes

• 60g onion

• 80g courgettes

• 100g aubergines

• 4 friggitelli peppers

• 4 anchovy fillet

• 10 basil leaves

• 2 spring onions

• extra-virgin olive oil

• salt

PREPARATION
Clean the vegetables, wash and chop in chunks (remove only stem and seeds from the friggitelli peppers).
Place 4 tbsp of oil in a large saucepan, then place on high heat and sauté the potatoes for 8 minutes.
Add the aubergines and the other vegetables a little at a time. Add salt. Cook for 20 minutes more, then add the basil and anchovy fillets, turn gently and cover with a lid. Let the vegetables blend their flavour for ten minutes before serving.
