We choose Cantabrian Sea’s anchovies, the finest quality in the world in terms of size, flesh and taste, to realize the best salty anchovies in the world.
The cold, well oxygenated waters, rich in plankton, make the flesh of these anchovies tender and flavoursome. We put them in salt, in 5K round cans, but, first of all, we evaluate the size of the fish to decide if we will do 12 or 13’s anchovies per line. The second step is to put anchovies among the salt after having removed head and giblets. Salt helps anchovies to mature and allow them to fully develop their taste and cconsistency.
Salted anchovies can be used in amusing culinary recipes and curious mix of flavors.
Once the anchovy’s flesh has been delicately cleaned up of salt, by an unbleached linen or by a knife, the anchovy is divided in two parts, delicately removing the central bone that holds them together.
