Radicchio and Sgombrotto Bruschetta

INGREDIENTS FOR 4 SERVINGS
• One 300g jar sgombrotto

• 250g red radicchio 

• 4 slices of lard

• 4 thick slices of rustic bread

• garlic

• parsley

• extra-virgin olive oil

PREPARATION
Toast the 4 slices of bread in the oven at 180° C. Prepare the radicchio, washed and sliced in stripes, on a cooking sheet lined with baking paper; dress with oil, salt and pepper.
When it is toasted, rub with garlic the hot bread slices, top with a slice of lard and the radicchio with dressing. Lastly, 1 sgombrotto fillet.
